Mini Easter Cupcakes

Ingredients:
1/2 cup Peanut Butter
1/4 cup Butter
2 Eggs
1 Tbsp. Vanillla
1/2 cup Sugar
1/4 cup Brown Sugar
1/4 cup Flour
1 1/2 Tbsp Cocoa Powder
1/2 Tsp. Baking Powder
Directions:
Preheat oven to 375
In a bowl beat together Peanut Butter, Butter, Eggs, Vanilla, Sugar, and Brown Sugar.
In a separate bowl mix Flour, Cocoa Powder, Baking Powder.
Add dry ingredients to Peanut Butter mixture and mix well.
Scoop batter in mini cupcake liners and bake 4-6 min
insert toothpick to check if done.

but I love these for easter you can top them with and frosting you like!
Having 3 little amazing, busy, kids around me all day I used store bought icing, the sprinkles where included so it made it simple fast and yummy!

M&M Cookies

Ingredients:

4 oz. Cream Cheese
1 cup Sugar
1 Egg
1 tsp. Vanilla
1/2 cup soft Butter
1 tbsp. Oil
1/4 tsp. Salt
1/2 ts. Baking Powder
1 cup Cake mix Flour
3/4 cup Flour
3/4 cup m&m Chocolates
Directions:
1- Beat soft (room temperature) Cream cheese, Butter, Egg, Vanilla and Sugar until smooth
2- Add in Salt, Cake Flour,Baking Powder and Flour mix well.
3-With a spatula mix in m&m
4- scoop on cookie sheet and bake at 375 until golden brown
5- let cool 3 minutes before removing from cookie sheet

they are soft and chewy and go perfect with a cup of coffee!
white Chocolate Cream Cheese Pie

Crust:
4 cups mini Nilla cookies
4 tsp Butter
Filling:
6 oz. Cream Cheese
2 tsp. Vanilla
1/2 cup confectioner sugar
1 1/2 cup sweetened whipping cream
1 cup white chocolate chips
fruit
1 pkg fruit glaze
directions:
1-Beat cream cheese, vanilla and confectioner sugar until smooth 2-2-fold in whipped cream.
3-melt chocolate chips and mix in cream cheese mixture.
4-spread on crust top with fruit.
5-prepare fruit glaze as directed on package and brush over pie
6-refrigerator 1 hour and enjoy!

Camaron Ranchero

Nothing like a Delicious bowl of soup on a cold cloudy day!
ThisMexican soup is easy and quick to make and yet so yummy!
I like to serve this with rice and avocado, and if you have some good ol Mexican crackers!
6 cups. Water
1 cup. Caldillo
3/4 cup. V8 Juice
1 cup. Pure de Tomate
2 tbsp. Ketchup
1 tbsp. Jugo de maggi
1 tbsp. Salsa de soya
1 1/2 tsp. Shrimp Bouillon
(Knorr, Caldo de Camarón)
1 tsp. Tomato Bouillon
(Knorr)
1/8 tsp. Cumin
1 Celery stick
2 Carrots
1 small Tomato
1/2 Onion
2 Jalapeños
2 Garlic cloves
handfull Cilantro
1 small Bay leaf
1 dried Chile de arbol
Salt & Pepper to taste
Directions:
1- Add all ingredients in pot and boil on medium heat until carrots are tender.
2- Remove Bay leaf and Chile de arbor.
3- Turn off heat
4- Add in 1/2 kg Shrimp (raw and cleaned) cover pot and let stand 10 minutes on stove before serving.

Cinnamon Oatmeal Cookies

My daughter has been asking me to make chocolate chip cookies all week last week and my son wanted oatmeal cookies so finally this morning I decided to bake cookies but I couldn't decide which ones and I didn't want to do both so I decided to create a recipe with that was a chocolate chip cookies and oatmeal cookies in one and I'm surprised how good they turned out!
1 cup. Butter
1 cup. Granulated Sugar
1 cup. Brown Sugar
1 Egg
1/2 tsp. Cinnamon
1/4 tsp. Salt
1 Tbsp. Vanilla
1 pkg Oatmeal
(Instant Quicker Cinnamon & Spice)
1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
2 3/4 cup. Flour
1/2 cup. Chocolate Chips
Directions:
1.Beat sugars and Butter until smooth
2.Add in egg, salt, and vanilla mix well
3.Add oatmeal, Baking Powder, Baking Soda mix again.
4.fold in chocolate chips with spatula
5.Fold in Flour 1/2 cup at a time
scoop on baking sheet (with parchment paper)
and bake at 350 for 8-10 minutes
Tip: once you add 2 1/2 cups of flour try baking just one cookie for testing if it still goes flat add the remaining flour if it doesnt don't add all the flour
Chorizo Scrambled Eggs

This is my sons all time favorite breakfast and I enjoy making it cuz its so quick and delicious!
1 Jalapeño
1/4 Onion
3 thin slices Ham
3 Tbsp. Chorizo
4 Eggs
Salt & Pepper
Directions:
1-cut jalapeños, onions, ham fry in a little bit of oil.
2- add in chorizo fry 2 min
3- whisk eggs add salt & pepper.
add to chorizo mixture in pan and fry and stir until done.

Banana cream cheese Pie

Seriously who doesn't like a Super yummy quick and easy Dessert?? I know I do! plus anything with cream cheese is worth drooling over!

I'll be honest I didn't expect this to be so delicious! But I didn't have much time to prepare dessert and to my daughter without dessert theres no food at all! So I starting beating the cream cheese and I thought bananas + cream cheese sounds yummy right now, and next thing you know here we are eating this yummy dessert and my daughter loved it!

Crust-
2 pkgs Gamesa Maravillas Cookies
2 tsp.Butter. Mix cookie crumbs with Butter and press in Plate, save 1/4 cup crumbs (without butter) for topping. slice bananas place on crust.
Filling-
1 pkg cream cheese (8oz)
1 can sweetened condensed milk
1 box instant banana pudding
1 cup milk
Directions-
1.Beat cream cheese until smooth.
2. Add condensed milk beat well.
3. Add in pudding and milk.
4. Pour on crust
5. Top with sliced Bananas and sprinkle with remaining crumbs. Refrigerate and enjoy!

Homemade Granola

Homemade Granola! this is so easy to make and so Delicious!
I was never really a big fan of Granola until I made this recipe and now I love it! I really like it with fruit and yogurt and my kiddos enjoy it as cereal with milk.

Homemade Granola
-3 cups Rolled Oats
-1/2cup Pecans
-1/4 cup Almonds
-1 cup Frosted Flakes
-3/4 cup Rice Cereal
-1/2 cup Brown Sugar
-1/4 cup White Sugar
-1 tsp. Cinnamon
1 1/2 tsp. Vanilla
-1/8 tsp. Salt
-4 tbsp. Honey
-2 tsp. Olive oil
Directions:
1. Preheat oven to 300F
2. Mix first 10 ingredients
3. Spread evenly on a cookie sheet with parchment paper
4. Drizzle with Honey and Olive oil
5. Bake for 45 min. Stirring every 15 min.
